today we are talking about the great taco soup that can satisfy all your cold weather cravings for warmth, comfort, and taste. This recipe can be can be changed up however you want for flavor but remember anything you change will effect the carb count that is so important when we are trying to watch our blood sugar readings. We like our food spicy. Leave out the jalapenos if you do not like them.

Ingredients:

1/2lb of ground. beef 1/2lb of ground pork

1 Tbsp smoked paprika 1 Tbsp onion powder

1/2 minced onion 1 Tbsp chili powder

1 Tbsp garlic powder 2 Tbsp cumin powder

1 lime for juice Ranch dressing mix

1 tsp himalayan pink salt 1 tsp black pepper

1 can rotel 1/2 cup chopped jalepeno

1 quart beef broth 1/4 cup sweet corn(drained and rinsed)

1 pint heavy whipping cream 1/2 cup chopped fresh cilantro

8 oz cream cheese sour cream for topping

black olives for topping chopped tomato for topping

shredded mexican cheese and or colby jack cheese. It is always better to shred your own cheese so that the starch they add to it to keep it from sticking won’t add to your carbs which could make your blood sugar rise.

Directions

  1. cooked ground meat with seasonings in 2 Tbsp of bacon grease. No need to drain unless there is excessive grease after cooking.

  2. Put cooked meat along with all the other ingredients and stir until everything is melted and combined. Let it simmer for about 15 minutes for all the ingredients to meld together for a good flavor.

  3. You can make some chips with low carb soft shells to it is even more authentic. Sprinkle them with lime juice and salt.

  4. Now put chips in bowl and add the soup over the chips. Put on cheese and whatever toppings you like that I have listed.
